Character: Aromatic with tones of citrus and young pineapple. Complex, very dry and crisp finish.
Soil: Weathered zeolite with crumbly pumic tuff. Volcanic reolite tuff, hard tuff mixed with yellow and red clay.
Cellar technology: Fermentation in stainless steel tanks under controlled temperature. Bottanage. On the lees for six months. Stored 2 months in large vats. Bottled in August 2013.
Storage: At a constant temperature of 12.8°C and 80% humidity. Clarification with bentonite.
