Terroir

 

The plantations of Tokaj Classic Winery Ltd. are around the village of Mád, which is situated in the Tokaj-Hegyalja region of north-eastern Hungary. Bordered by the Carpathian mountain range, its climate is protected.

A moist, warm autumn, and its special micro climate encourages the prolific growth of noble fungus called Botrytis Cinerea.

The Tokaj-Hegyalja region is noted for its unique climate and its soil. The ground is of volcanic origin (zeolite) and through its porosity contains a high percentage of minerals.

Beginning in mid-October and normally ending in November, the harvest can stretch in unusual years until January! Throughout the entire fermentation period, our 14 meter deep cellars maintain an even temperature between 11 and 12 degrees Celsius. The yield of high-quality Tokaj Aszú, depending on the vintage, is roughly 400-750 bottles of 0.5 liters per hectare.
